Ingredients
- 6 pork sausages
- 750 g (1½ lb) baby potatoes, halved
- 200 g (7 oz) bacon, cut into chunks
- 1 large onion, sliced
- 2 cloves garlic, minced
- 500 ml (2 cups) chicken stock
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- ½ tsp black pepper
- ½ tsp smoked paprika, optional
- 1 tbsp olive oil
- Salt, to taste
- 1–2 tbsp chopped fresh parsley, to finish
Method
- Brown the sausages: Heat the oil in a skillet and brown the sausages on all sides. They don’t need to be cooked through.
- Brown the bacon: In the same skillet, cook the bacon until lightly crisp. Remove and set aside.
- Layer the slow cooker: Put the potatoes and sliced onion in the bottom. Add the garlic, then arrange the sausages and bacon on top.
- Add the liquid: Pour in the chicken stock and Worcestershire sauce. Sprinkle over the thyme, pepper and paprika.
- Slow cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the potatoes are tender and the sausages are cooked through.
- Finish: Taste and adjust the seasoning. Sprinkle with parsley and serve hot.
