Slow-Cooker Sausage, Bacon & Potatoes

Cook: 6–8 hours on LOW or 3–4 hours on HIGH

Ingredients

  • 6 pork sausages
  • 750 g (1½ lb) baby potatoes, halved
  • 200 g (7 oz) bacon, cut into chunks
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 500 ml (2 cups) chicken stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • ½ tsp black pepper
  • ½ tsp smoked paprika, optional
  • 1 tbsp olive oil
  • Salt, to taste
  • 1–2 tbsp chopped fresh parsley, to finish

Method

  1. Brown the sausages: Heat the oil in a skillet and brown the sausages on all sides. They don’t need to be cooked through.
  2. Brown the bacon: In the same skillet, cook the bacon until lightly crisp. Remove and set aside.
  3. Layer the slow cooker: Put the potatoes and sliced onion in the bottom. Add the garlic, then arrange the sausages and bacon on top.
  4. Add the liquid: Pour in the chicken stock and Worcestershire sauce. Sprinkle over the thyme, pepper and paprika.
  5. Slow cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the potatoes are tender and the sausages are cooked through.
  6. Finish: Taste and adjust the seasoning. Sprinkle with parsley and serve hot.
