Slow Cooker 4-Ingredient Mushroom Beef Tips: The Ultimate Comfort Gravy

This simple comfort-food recipe uses just four main ingredients to create tender beef in a rich mushroom gravy. It’s perfect served over mashed potatoes, rice, or egg noodles.

Ingredients

  • 2 lbs (900 g) beef stew meat or beef tips
  • 1 packet onion soup mix
  • 1 can (10.5 oz / 300 g) condensed cream of mushroom soup
  • 8 oz (225 g) sliced mushrooms (fresh)

Optional: salt and pepper to taste, chopped parsley for garnish.

Instructions

  1. Place the beef tips in the slow cooker.
  2. Add the sliced mushrooms over the beef.
  3. In a bowl, mix the cream of mushroom soup with the onion soup mix until combined.
  4. Spread the mixture over the beef and mushrooms.
  5. Cover and cook:
    • Low: 7–8 hours
    • High: 4–5 hours
  6. Once the beef is fork-tender, stir everything together to create a thick, savory gravy.
  7. Serve hot over mashed potatoes, rice, or buttered noodles.

Tips

  • For a thinner gravy, stir in ½–1 cup beef broth during cooking.
  • For extra richness, add a tablespoon of Worcestershire sauce.
  • If using fresh mushrooms, browning them briefly in a skillet before adding can deepen the flavor.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat beautifully.

Why This Recipe Works

The onion soup mix provides seasoning, the cream of mushroom soup creates a velvety gravy, and the mushrooms release moisture as they cook, helping tenderize the beef while building deep, savory flavor with almost no prep work.
