This simple comfort-food recipe uses just four main ingredients to create tender beef in a rich mushroom gravy. It’s perfect served over mashed potatoes, rice, or egg noodles.
Ingredients
- 2 lbs (900 g) beef stew meat or beef tips
- 1 packet onion soup mix
- 1 can (10.5 oz / 300 g) condensed cream of mushroom soup
- 8 oz (225 g) sliced mushrooms (fresh)
Optional: salt and pepper to taste, chopped parsley for garnish.
Instructions
- Place the beef tips in the slow cooker.
- Add the sliced mushrooms over the beef.
- In a bowl, mix the cream of mushroom soup with the onion soup mix until combined.
- Spread the mixture over the beef and mushrooms.
- Cover and cook:
- Low: 7–8 hours
- High: 4–5 hours
- Once the beef is fork-tender, stir everything together to create a thick, savory gravy.
- Serve hot over mashed potatoes, rice, or buttered noodles.
Tips
- For a thinner gravy, stir in ½–1 cup beef broth during cooking.
- For extra richness, add a tablespoon of Worcestershire sauce.
- If using fresh mushrooms, browning them briefly in a skillet before adding can deepen the flavor.
- Leftovers keep well in the refrigerator for up to 3 days and reheat beautifully.
Why This Recipe Works
The onion soup mix provides seasoning, the cream of mushroom soup creates a velvety gravy, and the mushrooms release moisture as they cook, helping tenderize the beef while building deep, savory flavor with almost no prep work.
