- In a skillet over medium heat, sauté the spinach until wilted (about 2 minutes).
- Remove from heat and stir in Parmesan, mozzarella, and minced garlic. Set aside.

- Pat the salmon fillets dry and cut a slit in the side of each fillet to create a pocket.
- In a small bowl, mix smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper.
