Blackened Salmon Stuffed with Spinach & Parmesan

Boldly seasoned salmon fillets stuffed with a creamy spinach and Parmesan filling, then finished with a buttery lemon sauce—perfect for a gourmet weeknight meal!

Instructions

  1. Prepare the Filling:

    • In a skillet over medium heat, sauté the spinach until wilted (about 2 minutes).
    • Remove from heat and stir in Parmesan, mozzarella, and minced garlic. Set aside.
  2. Season the Salmon:

    • Pat the salmon fillets dry and cut a slit in the side of each fillet to create a pocket.
    • In a small bowl, mix smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper.
    • Rub the salmon fillets with olive oil, then generously coat with the seasoning mix.
  3. Stuff the Salmon:

    • Carefully stuff each fillet with the spinach and cheese mixture. Secure with toothpicks if needed.
  4. Sear the Salmon:

    • Heat a large skillet over medium-high heat. Add a little olive oil, then sear the salmon for 3-4 minutes per side, until blackened and cooked through.
  5. Make the Sauce:

    • In the same pan, melt butter and stir in lemon juice. Drizzle over the salmon before serving.
  6. Serve & Enjoy:

    • Pair with roasted vegetables, mashed potatoes, or a fresh salad.
