Ingredients
1 lb ground beef
1 (1-oz) packet taco seasoning
1 (10-oz) can diced tomatoes and green chiles, undrained
2 cups shredded cheddar cheese
1 (8-oz) bottle ranch dressing
5 (15-count) frozen phyllo tart shells
Instructions
Cook the Beef:
In a skillet over medium heat, cook the ground beef until no longer pink, breaking it up as it cooks.
Drain any excess grease.
Stir in the taco seasoning and undrained diced tomatoes with green chiles. Simmer for 5 minutes until the mixture thickens slightly.
Prepare the Phyllo Shells:
Preheat your oven to 350°F (175°C).
Arrange the frozen phyllo tart shells on a baking sheet.
Assemble the Bites:
Spoon the taco mixture evenly into each phyllo shell.
Sprinkle a generous amount of shredded cheddar cheese on top of each.
Bake:
Bake the taco bites for 10-12 minutes, or until the cheese is melted and the shells are golden and crispy.
Serve with Ranch:
Remove the bites from the oven and let them cool slightly.
Drizzle or serve with ranch dressing on the side for dipping.
