Creamy Mushroom Beef Bites

Ingredients

  • 1½–2 lb (700–900 g) beef stew meat or sirloin, cut into 1-inch cubes
  • 1 small onion, diced
  • 8 oz (225 g) mushrooms, sliced or chopped
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup (240 ml) beef broth
  • 1 cup (240 ml) heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp cornstarch + 2 tbsp cold water, optional for thickening
  • ½ cup shredded Parmesan, optional

Instructions

  1. Season the beef with salt, pepper, paprika and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on the outside. Don’t cook it through yet.
  3. Remove beef. Add butter, onion and mushrooms. Cook 5–7 minutes until softened and browned.
  4. Add garlic and cook for 30 seconds.
  5. Stir in beef broth, Worcestershire and Dijon. Scrape up the browned bits from the pan.
  6. Reduce heat and add heavy cream. Simmer 3–5 minutes.
  7. Return the beef to the sauce. Cover and simmer gently for 15–25 minutes, until the beef is tender.
  8. If you want the sauce thicker, stir in the cornstarch slurry and simmer another 1–2 minutes.
  9. Stir in Parmesan if using.
