Ingredients
- 4–6 bone-in pork chops, about 1 inch thick
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 2 tbsp olive oil
- 4 tbsp butter
- 5–6 cloves garlic, minced
- ⅓ cup honey
- ¼ cup chicken broth
- 2 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes, optional
- 1 tbsp cornstarch + 2 tbsp cold water, optional for thickening
- Fresh parsley, for garnish
Method
- Season the pork: Pat the chops dry and season both sides with salt, pepper, paprika and garlic powder.
- Sear: Heat olive oil in a large skillet over medium-high heat. Brown the chops for about 2–3 minutes per side. This gives them the beautiful color in the photo.
- Make the sauce: Reduce heat and add butter and garlic. Cook for about 30 seconds, then stir in honey, chicken broth, soy sauce, Worcestershire, Dijon and Italian seasoning.
- Slow cook: Place the pork chops in the slow cooker and pour the sauce over them.
- Cook on LOW for 3–4 hours or until the pork is tender and reaches a safe internal temperature.
- Thicken the sauce: Transfer the pork to a plate. Mix cornstarch with cold water and stir it into the hot sauce. Cover and cook on HIGH for about 10–15 minutes, until glossy and thick.
- Return the pork to the sauce and spoon plenty over the top.
- Finish with parsley and a little freshly cracked black pepper.
For the caramelized top in the photo
After slow cooking, place the chops on a baking tray, spoon extra sauce over them, and put them under a very hot grill/broiler for 2–4 minutesuntil the honey sauce becomes dark, sticky and caramelized.
