Slow-Cooker Honey Garlic Pork Chops

Ingredients

  • 4–6 bone-in pork chops, about 1 inch thick
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5–6 cloves garlic, minced
  • ⅓ cup honey
  • ¼ cup chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes, optional
  • 1 tbsp cornstarch + 2 tbsp cold water, optional for thickening
  • Fresh parsley, for garnish

Method

  1. Season the pork: Pat the chops dry and season both sides with salt, pepper, paprika and garlic powder.
  2. Sear: Heat olive oil in a large skillet over medium-high heat. Brown the chops for about 2–3 minutes per side. This gives them the beautiful color in the photo.
  3. Make the sauce: Reduce heat and add butter and garlic. Cook for about 30 seconds, then stir in honey, chicken broth, soy sauce, Worcestershire, Dijon and Italian seasoning.
  4. Slow cook: Place the pork chops in the slow cooker and pour the sauce over them.
  5. Cook on LOW for 3–4 hours or until the pork is tender and reaches a safe internal temperature.
  6. Thicken the sauce: Transfer the pork to a plate. Mix cornstarch with cold water and stir it into the hot sauce. Cover and cook on HIGH for about 10–15 minutes, until glossy and thick.
  7. Return the pork to the sauce and spoon plenty over the top.
  8. Finish with parsley and a little freshly cracked black pepper.

After slow cooking, place the chops on a baking tray, spoon extra sauce over them, and put them under a very hot grill/broiler for 2–4 minutesuntil the honey sauce becomes dark, sticky and caramelized.
