Juicy No-Fuss Slow Cooker Chicken That Basically Cooks Itself

Ingredients

  • 2–3 pounds boneless, skinless chicken breasts or thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil or melted butter
  • ½ cup low-sodium chicken broth

Instructions

  1. Lightly grease the slow cooker.
  2. Place the chicken in the slow cooker.
  3. In a small bowl, mix the garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. Sprinkle evenly over the chicken.
  4. Drizzle with olive oil or melted butter.
  5. Pour the chicken broth around the sides of the chicken.
  6. Cover and cook:
    • Low: 4–6 hours
    • High: 2–3 hours
  7. The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork.
  8. Let the chicken rest for 5 minutes before slicing or shredding. Spoon some of the cooking juices over the top before serving.

Serving Ideas

  • Serve with mashed potatoes, rice, or buttered noodles.
  • Add to tacos, wraps, salads, or sandwiches.

  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

Yield: 6 servings.
