Tender, juicy chicken with a simple 3-ingredient seasoning—perfect for an easy family dinner.
Ingredients
- 1 whole chicken (about 1.5–2 kg / 3½–4½ lb)
- 1 packet dry Italian seasoning mix
- ½ cup butter, melted
Instructions
- Prepare the chicken: Remove the giblets and pat the chicken dry with paper towels.
- Season: Rub the melted butter all over the chicken. Sprinkle the Italian seasoning generously over the entire chicken, including underneath the skin if you can.
- Slow cook: Place the chicken breast-side upin a 6-quart slow cooker. You don’t need to add water—the chicken will release plenty of juices.
- Cover and cook on LOW for 6–7 hours, or until the thickest part of the breast reaches 165°F / 74°C and the thighs are tender.
- Optional crispy skin: Transfer the cooked chicken to a baking sheet and place under the oven broiler/grill for 3–5 minutes until the skin is golden and crisp. Watch carefully.
- Rest for 10–15 minutes before carving.
Easy serving idea
Serve with mashed potatoes, roasted vegetables, or Amish-style buttered noodles, spooning some of the flavorful juices from the slow cooker over the top.
