A wildly festive layer cake packed with chocolate, peppermint, colorful candy, and plenty of holiday sparkle. It’s intentionally over-the-top—the more “chaos,” the better!
Ingredients
For the cake
- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup hot coffee or hot water
For the frosting
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- ½ cup cocoa powder
- 2–4 tbsp heavy cream or milk
- 1 tsp vanilla extract
- Pinch of salt
- ½ tsp peppermint extract, optional
For the Christmas chaos
- Crushed peppermint candies or candy canes
- Mini marshmallows
- Red and green sprinkles
- Chocolate candies
- White chocolate chips
- Holiday-colored M&M-style candies
- Mini gingerbread cookies
- Powdered sugar, for “snow”
Instructions
- Bake the cake: Heat the oven to 175°C (350°F). Grease and line two 9-inch round cake pans.
- Whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, buttermilk, oil, and vanilla. Beat until combined. Carefully stir in the hot coffee or water—the batter will be thin.
- Divide between the pans and bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
- Make the frosting: Beat the butter until fluffy. Gradually add powdered sugar and cocoa powder. Add cream, vanilla, salt, and peppermint extract, then beat until smooth and spreadable.
- Build the cake: Place one cake layer on a serving plate and spread with frosting. Add the second layer and cover the entire cake with a generous layer of frosting.
- Create the chaos: Press candies, sprinkles, crushed peppermint, chocolate pieces, and mini cookies around the top and sides. Let some decorations deliberately spill over the edges.
- Finish: Dust lightly with powdered sugar for a snowy effect and add a few whole candy canes or gingerbread cookies on top.

Don’t try to make the decorations perfectly symmetrical. Pile everything high, mix textures and colors, and let a few treats tumble down the sides. The wonderfully messy look is what makes this cake a Christmas showstopper.
Make-ahead tip: Bake the cake layers a day ahead and wrap them tightly once cooled. Frost and decorate just before serving for the freshest appearance.
