Fruit Roll-Ups Cheesecake Bites

These colorful, no-bake cheesecake bites combine creamy cheesecake filling with chewy fruit roll-ups for a fun party treat.

Ingredients

Cheesecake Filling

  • 8 ounces (225 g) cream cheese, softened
  • ¼ cup (30 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice (optional, for brightness)
  • ½ cup (120 ml) heavy whipping cream, whipped to stiff peaks

For Assembly

  • 8–10 fruit roll-ups (assorted flavors)
  • Fresh strawberries, diced (optional)
  • Fresh blueberries or raspberries (optional)
  • Rainbow sprinkles (optional)

Instructions

  1. Make the filling.
    Beat the softened cream cheese until smooth. Add the powdered sugar, vanilla, and lemon juice, then beat until creamy.
  1. Fold in the whipped cream.
    Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  1. Prepare the fruit roll-ups.
    Unroll one fruit roll-up at a time and place it on a clean work surface.
  1. Fill.
    Spread a thin, even layer of the cheesecake filling over each fruit roll-up, leaving about ½ inch (1 cm) around the edges. If desired, sprinkle on a few finely diced berries.
  1. Roll.
    Roll each fruit roll-up up tightly, jelly-roll style.
  1. Chill.
    Place the rolls seam-side down on a plate or tray and refrigerate for at least 1 hour until firm.
  1. Slice.
    Using a sharp knife lightly coated with cooking spray or wiped clean between cuts, slice each roll into 1-inch (2.5 cm) pieces.
  1. Serve.
    Garnish with sprinkles or extra berries if desired and serve chilled.

Tips

  • Work with one fruit roll-up at a time—they become stickier once unwrapped.
  • Don’t overfill, or the cheesecake mixture may squeeze out when rolling.
  • Chill thoroughly before slicing for the cleanest cuts.
  • A warm knife wiped clean between cuts helps create neat edges.

  • Strawberry Shortcake: Add crushed vanilla wafers to the filling.
  • Cookies & Cream: Fold crushed chocolate sandwich cookies into the cheesecake mixture.

Storage

  • Refrigerator: Store in an airtight container for up to 2 days.
