Ingredients
- 1 package (3 oz / 85 g) strawberry gelatin powder
- 1 cup boiling water
- ½ cup cold water
- 1 container (8 oz / 225 g) whipped topping, thawed
- 2 cups mini marshmallows
- 1 cup fresh strawberries, diced
- 1 can (8 oz / 225 g) crushed pineapple, well drained
- Optional: ½ cup chopped pecans or walnuts
Instructions
- In a large bowl, dissolve the strawberry gelatin in the boiling water.
- Stir in the cold water and let the mixture cool to room temperature.
- Refrigerate for about 20–30 minutes, until slightly thickened but not fully set.
- Gently fold in the whipped topping until smooth and fluffy.
- Add the mini marshmallows, strawberries, and drained pineapple. Stir gently to combine.
- Fold in nuts if using.
- Cover and refrigerate for at least 2 hours before serving.
Tips
- For extra strawberry flavor, add an additional ½ cup diced strawberries.
- Make sure the pineapple is thoroughly drained to keep the salad fluffy rather than watery.
- This dessert is best served chilled and can be made a day ahead.
