Ingredients

  • 1 package (3 oz / 85 g) strawberry gelatin powder
  • 1 cup boiling water
  • ½ cup cold water
  • 1 container (8 oz / 225 g) whipped topping, thawed
  • 2 cups mini marshmallows
  • 1 cup fresh strawberries, diced
  • 1 can (8 oz / 225 g) crushed pineapple, well drained
  • Optional: ½ cup chopped pecans or walnuts

Instructions

  1. In a large bowl, dissolve the strawberry gelatin in the boiling water.
  2. Stir in the cold water and let the mixture cool to room temperature.
  3. Refrigerate for about 20–30 minutes, until slightly thickened but not fully set.
  4. Gently fold in the whipped topping until smooth and fluffy.
  5. Add the mini marshmallows, strawberries, and drained pineapple. Stir gently to combine.
  6. Fold in nuts if using.
  7. Cover and refrigerate for at least 2 hours before serving.

Tips

  • For extra strawberry flavor, add an additional ½ cup diced strawberries.
  • Make sure the pineapple is thoroughly drained to keep the salad fluffy rather than watery.
  • This dessert is best served chilled and can be made a day ahead.
