Point Blueberry Muffins (Weight Watchers Friendly)

Ingredients:

  • 2 cups Kodiak Cakes Protein Pancake Power Mix (Buttermilk flavor works best)

  • 1 cup unsweetened applesauce

  • 1 egg (or 2 egg whites)

  • 1/2 cup water (or almond milk)

  • 1/4 cup zero-calorie sweetener (like Swerve or Stevia – optional)

  • 1 tsp vanilla extract

  • 1 cup fresh or frozen blueberries

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Line a muffin tin with cupcake liners and spray lightly with nonstick spray.

  3. In a mixing bowl, combine the Kodiak mix, applesauce, egg, water, sweetener (if using), and vanilla extract. Mix until just combined.

  4. Gently fold in the blueberries.

  5. Spoon the batter evenly into the muffin cups (makes about 12 muffins).

  6. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool slightly and enjoy!
