Pineapple Sunshine Cake

This dessert is so moist, sweet, and full of tropical flavor — it’s sunshine in every bite! Perfect for potlucks or Sunday dessert.

Ingredients:

1 box yellow cake mix

1 can (20 oz) pineapple slices, drained

1/2 cup unsalted butter, melted

1/2 cup brown sugar

1 cup crushed pineapple (with juice)

1 box (3.4 oz) instant vanilla pudding

1 1/2 cups cold milk

1 cup whipped topping (like Cool Whip)

Directions:

1. Preheat oven to 350°F (175°C).

2. Pour melted butter into a greased 9×13″ baking dish, sprinkle brown sugar over it, and arrange pineapple slices on top.

3. Prepare cake mix according to the box instructions, substituting the water with crushed pineapple and its juice. Pour batter over the pineapples.

4. Bake for 35–40 minutes or until golden and a toothpick comes out clean. Cool completely.

5. In a bowl, whisk pudding mix with milk until thickened, then fold in whipped topping.

6. Slice cake in half horizontally and spread the creamy filling in the middle, or frost the top if preferred.

7. Chill before serving!
