Taco Potatoes

Ingredients:

• 1 pound lean ground beef
• 4 to 6 medium Russet potatoes
• 1 packet (1 ounce) taco seasoning
• ½ cup water

Directions:

1. Prepare the Potatoes:
• Wash and peel (optional) the Russet potatoes. Cut them into bite-sized cubes.
2. Cook the Potatoes:
• In a large pot, boil the cubed potatoes in salted water for about 10-12 minutes or until tender. Drain and set aside.
3. Cook the Ground Beef:
• In a skillet over medium heat, cook the ground beef until browned and crumbled, about 5-7 minutes. Drain any excess fat.
4. Season the Beef:
• Add the taco seasoning to the cooked beef along with ½ cup of water. Stir well and simmer for 2-3 minutes until the mixture thickens.
5. Combine the Potatoes and Beef:
• Gently toss the cooked potatoes with the seasoned beef mixture until everything is well-coated.
6. Serve:
• Serve the Taco Potatoes hot as a side dish or a main dish. Optionally, garnish with shredded cheese, sour cream, or chopped green onions.
