Pasta-Less Italian Chopped Salad

Ingredients:

  • 1 large red bell pepper, diced
  • 1 large yellow bell pepper, diced
  • 1 large orange bell pepper, diced
  • 2 large green bell peppers, diced
  • 1 pack snack-size tomatoes, quartered
  • 2 cucumbers, halved, de-seeded, and quartered
  • 1 red onion, finely chopped
  • ½ lb deli ham, chopped
  • ½ lb deli turkey, chopped
  • 1 package cheddar cheese cubes
  • 1 small package real bacon bits
  • 1 bottle Skinny Girl Italian dressing
  • (Optional: black olives and banana peppers)

Directions:

  1. In a large mixing bowl, combine the diced bell peppers, tomatoes, cucumbers, and red onion.
  2. Add the chopped deli ham, turkey, and cheddar cheese cubes.
  3. Sprinkle in the bacon bits and any optional ingredients like black olives or banana peppers.
  4. Pour the Italian dressing over the mixture and toss until evenly coated.
  5. Serve immediately or store in the refrigerator for meal prep throughout the week.
  6. (Optional) Serve over shredded lettuce for a more traditional salad-style dish.
