These Cowboy Cookies are loaded with hearty ingredients like oats, chocolate chips, and nuts for a chewy, crunchy, and utterly delicious treat! Perfect for dessert, snacks, or even breakfast on the go.

Ingredients:

1 cup butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon (optional, but recommended)
2 cups rolled oats
1 cup semi-sweet chocolate chips
3/4 cup chopped pecans or walnuts
1/2 cup shredded coconut (optional)

Instructions:

Preheat Oven:
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
Cream the Butter & Sugars:
In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.
Add Wet Ingredients:
Mix in the eggs one at a time, then add the vanilla extract.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the Good Stuff:
Stir in the oats, chocolate chips, nuts, and shredded coconut (if using).
Scoop & Bake:
Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
