Ingredients:
Donuts:
2 cups all-purpose flour
1/2 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/4 cup unsalted butter, melted
2 large eggs
1 tsp vanilla extract
1 cup fresh strawberries, finely diced
Cheesecake Filling:
8 oz cream cheese, softened
1/4 cup powdered sugar
1 tsp lemon juice
Glaze:
1 cup powdered sugar
2-3 tbsp milk
1 tsp vanilla extract
Directions:
Preheat and Prep:
Preheat your oven to 375°F (190°C). Lightly grease a donut pan with non-stick spray or butter.
Mix Dry Ingredients:
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Combine Wet Ingredients:
In a separate bowl, mix the milk, melted butter, eggs, and vanilla extract until well combined.
Create Batter:
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix. Gently fold in the finely diced strawberries.
Fill and Bake:
Spoon the batter into the prepared donut pan, filling each mold about 3/4 full. Bake for 15-18 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
Prepare Cheesecake Filling:
While the donuts are baking, prepare the cheesecake filling by beating the softened cream cheese, powdered sugar, and lemon juice together until smooth and creamy.
Cool and Fill:
Once the donuts have cooled, use a small knife to cut a hole in each donut. Pipe the cheesecake filling into the center of each donut using a piping bag or a zip-lock bag with the corner snipped off.
Make the Glaze:
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and of drizzling consistency.
Glaze and Serve:
Drizzle the glaze over the filled donuts and let it set for a few minutes before serving.
