Cuppa Cuppa Cake

The Ingredients

  • Unsalted butter, for greasing the pan

  • 1 cup self-rising flour (this is key for the cake to rise)

  • 1 cup granulated sugar

  • 1 (15-ounce) can fruit cocktail, in juice and undrained

For Serving (Highly Recommended)

  • Vanilla ice cream or unsweetened whipped cream

The Method

Preheat your oven to 350°F (175°C). Generously grease an 8×8-inch baking dish with butter and set it aside.

In a medium bowl, stir together the self-rising flour and sugar until they are completely combined. Add the entire can of fruit cocktail, including all of its juice, and stir until the batter is just combined. Be careful not to overmix—a few lumps are perfectly fine, as overworking the batter can make the cake tough rather than tender.

Pour the batter into your prepared baking dish, spreading it into an even layer with a spatula. The batter will be somewhat thin and loose, but this is exactly how it should be; the fruit will distribute itself beautifully as it bakes.

Slide the dish into the preheated oven and bake for thirty-five to forty minutes, or until the top is a lovely golden brown and the cake is set—it should look dry on top and spring back slightly when pressed gently in the center. A toothpick inserted into the middle should come out clean or with just a few moist crumbs clinging to it.

Remove the dish from the oven and let it stand for five to ten minutes before serving. For the full Truvy experience, serve warm with a generous scoop of vanilla ice cream or a dollop of unsweetened whipped cream. The cold, creamy ice cream melting into the warm, sweet cake is pure Southern bliss.

A Few Grace Notes

While the original recipe calls for just three ingredients, a few popular variations have emerged over the years. Adding a teaspoon of cinnamon to the dry ingredients provides a warm, spiced note that pairs beautifully with the fruit cocktail. For a more fruit-forward cake, some cooks add a second can of drained fruit cocktail to the batter for an extra layer of juicy fruit in every bite. You can also experiment with different fruits—peach pie filling, crushed pineapple, or even fresh berries all work wonderfully in place of the fruit cocktail.

Leftovers, if any remain, can be covered and stored at room temperature for up to three days. The cake is equally delicious enjoyed cold straight from the fridge, though a quick reheat in the microwave brings back that fresh-from-the-oven warmth that makes this dessert so special.

Cuppa Cuppa Cake is proof that the simplest recipes often become the most beloved. It is humble, unpretentious, and deeply comforting—a true Southern treasure that tastes like sweet tea, front porches, and good company.
