How to Make It

Bring it to a boil, then stir in a cornstarch slurry—cornstarch mixed with a little cold water—and cook until the sauce thickens into a glossy glaze. Remove it from the heat and set it aside.

If you’re using cheese, sprinkle it generously over the top.

Cover the dish with foil and bake for about twenty minutes, then remove the foil and continue baking until the casserole is heated through, the sauce is bubbling, and the cheese is melted and golden. If you’re using a version where the chicken is baked in whole pieces before being shredded, you’ll need to bake it covered for about thirty minutes, shred the chicken, add the rice, and then bake uncovered for a final stretch.

Once it’s out of the oven, let the casserole rest for about five minutes before serving. Garnish with sliced green onions and a sprinkle of sesame seeds for a beautiful finish. Drizzle any reserved teriyaki sauce over individual servings for an extra pop of flavor.

Tips and Variations

This recipe is wonderfully adaptable. Feel free to swap the chicken for cooked turkey, shrimp, or even tofu for a vegetarian version. You can also use any vegetables you have on hand—snow peas, zucchini, mushrooms, or asparagus all work well. If you’re making the sauce from scratch, adjust the honey or brown sugar to your preferred sweetness level.

This casserole is a great make-ahead meal. You can assemble it up to a day in advance, store it covered in the refrigerator, and bake it when you’re ready. Leftovers keep beautifully in the fridge for three to four days and can also be frozen for up to three months. To reheat, simply warm it in the oven or microwave until heated through.
