Ingredients

For the filling

  • 1 lb (450 g) ground beef
  • 1 small onion, finely diced

  • ½ teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons tomato paste
  • 2 tablespoons chopped fresh parsley
  • ½ cup (55 g) shredded mozzarella or cheddar cheese (optional)

For the pastry

  • 2 sheets frozen puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon sesame or poppy seeds (optional)

Instructions

1. Prepare the filling

  1. Heat olive oil in a skillet over medium heat.
  2. Cook the onion for 3–4 minutes until softened.
  3. Stir in the garlic and cook for 30 seconds.
  4. Add the ground beef and cook until browned, breaking it apart with a spoon.
  5. Drain any excess fat.
  6. Stir in paprika, cumin, oregano, salt, pepper, red pepper flakes, and tomato paste.
  7. Cook for another 2–3 minutes.
  8. Remove from the heat and let the mixture cool slightly.
  9. Fold in parsley and cheese, if using.

2. Assemble the rolls

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking tray with parchment paper.
  3. Cut each puff pastry sheet into four rectangles.
  4. Spoon a strip of beef filling down the center of each rectangle.
  5. Fold the pastry over the filling and seal the edges by pressing with a fork.
  6. Place seam-side down on the baking tray.

3. Bake

  1. Brush each roll with beaten egg.
  2. Sprinkle with sesame or poppy seeds if desired.
  3. Cut two or three small slits in the top of each roll.
  4. Bake for 25–30 minutes, or until the pastry is deeply golden and puffed.

4. Serve

Allow the rolls to cool for about 5 minutes before serving. Enjoy with:
