Pizza Enchiladas Recipe

Ingredients:

  • 8 flour tortillas (8-inch)

  • 2 cups pizza sauce (store-bought or homemade)

  • 1 ½ cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 1 cup sliced pepperoni (or substitute with cooked sausage, mushrooms, or bell peppers)

  • ½ cup sliced black olives (optional)

  • ½ cup diced onions (optional)

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 375°F (190°C).

  2. Prepare Filling:

    • In a mixing bowl, combine 1 cup of the mozzarella cheese, half of the Parmesan, half of the pepperoni, olives, onions (if using), and ½ cup of the pizza sauce.

    • Stir in Italian seasoning and garlic powder.

  3. Assemble Enchiladas:

    • Lay a tortilla flat, spoon about 2–3 tablespoons of the filling down the center, and roll it up.

    • Place seam-side down in a greased 9×13-inch baking dish.

    • Repeat with the remaining tortillas and filling.

  4. Top It Off:

    • Pour the remaining 1½ cups of pizza sauce over the enchiladas.

    • Sprinkle the rest of the mozzarella, Parmesan, and pepperoni evenly over the top.

  5. Bake:

    • Cover loosely with foil and bake for 20 minutes.

    • Remove foil and bake an additional 10 minutes, or until the cheese is melted and bubbly.

  6. Garnish and Serve:

    • Sprinkle with fresh basil or parsley.

    • Serve warm with a side salad or garlic bread.
