Crispy Mozzarella Bites

Golden, melty, stretchy, and oh-so-craveable!

Ingredients (Makes 36–48 bites):

  • 12 mozzarella string cheese sticks, cut into 1” pieces

  • ½ cup all-purpose flour

  • 2 large eggs

  • 2 tablespoons milk

  • 1½ cups Italian-style breadcrumbs

  • ½ teaspoon garlic powder (optional)

  • ½ teaspoon dried oregano (optional)

  • Oil for frying (vegetable, canola, or peanut)

Instructions:

  1. Prep the Breading Station:

    • Bowl 1: Place flour.

    • Bowl 2: Whisk eggs with milk.

    • Bowl 3: Mix breadcrumbs with garlic powder and oregano (if using).

  2. Coat the Cheese:

    • Dredge each mozzarella piece in flour (shake off excess).

    • Dip into egg mixture.

    • Coat thoroughly with breadcrumbs.

    • Optional but recommended: For an extra-crispy coating, repeat egg and breadcrumb steps for double breading.

  3. Freeze:

    • Place coated bites on a baking sheet lined with parchment.

    • Freeze for at least 1 hour (this prevents cheese from leaking during frying).

  4. Fry:

    • Heat oil in a deep skillet or pot to 350°F (175°C).

    • Fry bites in small batches for about 1–2 minutes, until golden brown.

    • Remove with a slotted spoon and drain on paper towels.

  5. Serve:

    • Serve immediately with warm marinara sauce, garlic aioli, or ranch.

Tips:

  • Don’t skip the freezing — it’s crucial to keep the cheese inside while frying.

  • Air fryer? Yes! Air fry at 400°F for 5–7 minutes, flipping halfway through (still freeze before).
