Golden, melty, stretchy, and oh-so-craveable!
Ingredients (Makes 36–48 bites):

12 mozzarella string cheese sticks, cut into 1” pieces

½ cup all-purpose flour

2 large eggs

2 tablespoons milk

1½ cups Italian-style breadcrumbs

½ teaspoon garlic powder (optional)

½ teaspoon dried oregano (optional)

Oil for frying (vegetable, canola, or peanut)
Instructions:

Prep the Breading Station:

Bowl 1: Place flour.

Bowl 2: Whisk eggs with milk.

Bowl 3: Mix breadcrumbs with garlic powder and oregano (if using).

Coat the Cheese:

Dredge each mozzarella piece in flour (shake off excess).

Dip into egg mixture.

Coat thoroughly with breadcrumbs.

Optional but recommended: For an extra-crispy coating, repeat egg and breadcrumb steps for double breading.

Freeze:

Place coated bites on a baking sheet lined with parchment.

Freeze for at least 1 hour (this prevents cheese from leaking during frying).

Fry:

Heat oil in a deep skillet or pot to 350°F (175°C).

Fry bites in small batches for about 1–2 minutes, until golden brown.

Remove with a slotted spoon and drain on paper towels.

Serve immediately with warm marinara sauce, garlic aioli, or ranch.

Don’t skip the freezing — it’s crucial to keep the cheese inside while frying.

Air fryer? Yes! Air fry at 400°F for 5–7 minutes, flipping halfway through (still freeze before).
