Irresistible Baked Zucchini and Cheese

Ingredients

  • 3 medium zucchinis, thinly sliced

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 1 cup heavy cream (or whole milk for lighter option)

  • 2 large eggs

  • 2 cloves garlic, minced

  • 1 teaspoon dried Italian seasoning

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 tablespoons breadcrumbs (optional for topping)

  • 1 tablespoon butter (for greasing dish)


Instructions

1. Prepare the Zucchini

Preheat oven to 375°F (190°C). Grease a baking dish with butter. Thinly slice zucchinis into rounds or half-moons.

2. Make the Cream Mixture

In a bowl, whisk eggs, heavy cream, garlic, Italian seasoning, salt, and pepper until smooth.

3. Assemble the Dish

Layer half the zucchini slices in the dish. Sprinkle with half the mozzarella and Parmesan. Pour half the cream mixture over. Repeat layers with remaining zucchini, cheeses, and cream.

4. Add Topping

(Optional) Sprinkle breadcrumbs on top for crunch.

5. Bake

Bake for 25–30 minutes until golden and bubbly. For extra browning, broil for 2 minutes at the end.

  • Serve as a vegetarian main with crusty bread or salad.
