Fruit Pizza

Ingredients:
1 package pre-made sugar cookie dough (or your favorite cookie recipe)
8 ounces cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped topping
1 cup sliced strawberries
1 cup peeled and sliced kiwi
1 cup blueberries
1 cup drained mandarin oranges
1/4 cup shredded coconut (optional)
Mint leaves for garnish (optional)

Directions:
Preheat the oven to 350°F (175°C).
Roll out the sugar cookie dough on a greased or parchment-lined pizza pan, shaping it into a round crust. Bake for 10 to 12 minutes, or until the edges are lightly golden. Let cool completely.
In a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped topping.
Spread the cream cheese mixture evenly over the cooled cookie crust.
Arrange the sliced strawberries, kiwi, blueberries, and mandarin oranges on top of the cream cheese layer in a decorative pattern.
If desired, sprinkle shredded coconut over the top.
Chill the fruit pizza in the refrigerator for at least one hour to let the flavors blend and the base firm up.
Garnish with mint leaves if you like, slice, and serve chilled.
