Spinach Garlic Meatballs Stuffed with Mozzarella
Ingredients:
For the meatballs:

1 lb (450g) ground beef or ground turkey

1 cup fresh spinach, finely chopped (or thawed frozen spinach, squeezed dry)

4 cloves garlic, minced

1/2 cup grated Parmesan cheese
-
1/4 cup breadcrumbs (or almond flour for low-carb)

1 egg
-
1 tsp Italian seasoning
-
1/2 tsp red pepper flakes (optional)

Salt and black pepper to taste
Stuffing:

4 oz (110g) mozzarella cheese, cut into small cubes
To cook:

1–2 tbsp olive oil
-
Marinara sauce (optional, for serving)
Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the meat mixture:
In a large bowl, combine ground meat, chopped spinach, garlic, Parmesan, breadcrumbs, egg, Italian seasoning, red pepper flakes, salt, and pepper. Mix until just combined (don’t overmix). -
Shape & stuff the meatballs:
Take about 2 tablespoons of the meat mixture, flatten slightly, and place a cube of mozzarella in the center. Wrap the meat around the cheese and roll into a ball. Repeat with the rest. -
Sear (optional):
For extra flavor and a golden crust, sear the meatballs in a skillet with olive oil over medium-high heat for 2–3 minutes per side. Then transfer to the oven. (You can skip this step and go straight to baking if preferred.) -
Bake:
Place meatballs on the prepared sheet. Bake for 15–18 minutes, or until cooked through (internal temp: 160°F / 71°C). -
Serve:
Spoon warm marinara sauce over the meatballs, garnish with fresh parsley or basil, and serve hot.
Serving Ideas:

Serve over spaghetti, zucchini noodles, or in a sub roll.
