Chicken Zucchini & Fresh Corn Burgers
Ingredients:

1 pound ground chicken

1 medium zucchini, grated (about 1 cup)

1/2 cup fresh corn kernels (or frozen, thawed)

1/4 cup finely chopped green onions

2 cloves garlic, minced

1/4 cup chopped fresh parsley or cilantro

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon paprika (optional)

1/4 cup breadcrumbs (more if needed for binding)

1 tablespoon olive oil (for cooking)
For serving (optional):

Burger buns

Lettuce, tomato, red onion slices

Your choice of sauce (mayonnaise, aioli, yogurt sauce, etc.)
Instructions:

Prepare the zucchini
Grate the zucchini and place it in a clean kitchen towel or paper towels. Squeeze out as much liquid as possible to avoid soggy burgers. -
Mix the burger ingredients
In a large mixing bowl, combine ground chicken, grated zucchini, corn, green onions, garlic, parsley or cilantro, salt, pepper, paprika, and breadcrumbs. Mix gently until just combined. If the mixture feels too wet to form patties, add a bit more breadcrumbs. -
Form the patties
Shape the mixture into 4–6 equal-sized patties, depending on your preferred burger size. -
Cook the burgers
Heat olive oil in a large skillet over medium heat. Cook the patties for about 5–6 minutes per side, or until golden brown and fully cooked through (internal temperature should reach 165°F or 74°C). -
Assemble the burgers
Toast the burger buns if desired. Place each patty on the bottom half of a bun, add your preferred toppings and sauce, and close with the top bun. -
Serve
Serve warm with a side salad, fries, or grilled vegetables.
