Bang Bang Chicken Fried Rice

 Ingredients:

For the Bang Bang Sauce:

  • 1/2 cup mayonnaise (preferably Japanese mayo for richness)

  • 2–3 tbsp sweet chili sauce

  • 1–2 tbsp Sriracha (adjust for heat preference)

  • 1 tbsp honey or sugar (optional, for sweetness)

  • 1 tsp rice vinegar or lime juice (optional, for tang)

For the Fried Rice:

  • 2 cups cooked and chilled rice (preferably day-old)

  • 1 lb chicken breast or thighs, diced

  • 2 eggs, lightly beaten

  • 1 cup frozen mixed vegetables (peas, carrots, corn, etc.)

  • 3 cloves garlic, minced

  • 1 small onion, finely chopped

  • 2–3 tbsp soy sauce (to taste)

  • 1 tbsp oyster sauce (optional, for depth)

  • 1–2 tsp sesame oil

  • 2 tbsp neutral oil (vegetable, canola)

Optional Garnish:

  • Green onions, sliced

  • Sesame seeds

  • Crushed peanuts

  • Extra bang bang sauce drizzle

 Instructions:

  1. Make the Bang Bang Sauce
    In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and honey. Adjust heat and sweetness to your taste. Set aside.

  2. Cook the Chicken

    • Heat 1 tbsp oil in a large skillet or wok over medium-high heat.

    • Add diced chicken, season with salt and pepper, and cook until golden and cooked through (about 5–7 minutes).

    • Optional: Toss cooked chicken in a few tablespoons of bang bang sauce. Set aside.

  3. Scramble the Eggs

    • Push chicken to the side or remove from pan.

    • Add a little more oil if needed, pour in the beaten eggs, and scramble until just cooked. Remove and set aside with chicken.

  4. Sauté the Veggies

    • Add remaining oil, then cook onion and garlic until fragrant.

    • Add frozen veggies and stir-fry until warmed through.

  5. Fry the Rice

    • Add chilled rice to the pan. Break up clumps and fry for 3–4 minutes.

    • Drizzle in soy sauce, oyster sauce (if using), and sesame oil.

    • Mix in the cooked chicken and scrambled eggs.

  6. Finish with Sauce

    • Stir in half of the bang bang sauce (or more, to taste).

    • Cook another 1–2 minutes to heat through.

  7. Garnish and Serve

    • Top with green onions, sesame seeds, crushed peanuts, and extra bang bang sauce.

Tips:

  • Use cold, day-old rice for best texture.

  • Add chopped fresh chili or red pepper flakes for extra heat.

  • Swap chicken for shrimp or tofu for variety.
