Tex-Mex Grilled Cheese Sandwich
Ingredients (Makes 2 sandwiches):

4 slices of bread (Texas toast, sourdough, or your favorite)

1 cup shredded cheese (cheddar, pepper jack, or a Mexican blend)

½ cup cooked black beans (drained and rinsed)

½ cup corn kernels (fresh, canned, or frozen and thawed)

¼ cup diced red bell pepper or jalapeño (for heat)

2 tbsp chopped cilantro
-
½ tsp chili powder
-
2 tbsp butter, softened
-
Optional add-ins:

2–4 tbsp salsa or hot sauce (for extra punch)

2–3 tbsp sour cream or guacamole (for serving)

Instructions:

Prep the Filling:

In a bowl, mix cheese, black beans, corn, bell pepper/jalapeño, cilantro, and chili powder.

Stir until everything is well combined.

Assemble the Sandwich:

Spread a thin layer of butter on one side of each bread slice.

On the non-buttered side, pile on the Tex-Mex filling.

Top with another slice of bread, buttered side facing out.

Grill:

Heat a skillet or griddle over medium heat.

Cook each sandwich for 3–4 minutes per side, or until golden brown and the cheese is melted.

Slice in half and serve hot with sour cream, salsa, or guacamole on the side.
