Instructions:

Preheat Oven:

Preheat your oven to 375°F (190°C).

Prepare Filling:

In a mixing bowl, combine 1 cup of the mozzarella cheese, half of the Parmesan, half of the pepperoni, olives, onions (if using), and ½ cup of the pizza sauce.

Stir in Italian seasoning and garlic powder.

Assemble Enchiladas:

Lay a tortilla flat, spoon about 2–3 tablespoons of the filling down the center, and roll it up.

Place seam-side down in a greased 9×13-inch baking dish.

Repeat with the remaining tortillas and filling.

Pour the remaining 1½ cups of pizza sauce over the enchiladas.
