Classic Sausage Gravy
A rich, creamy, and flavorful Southern-style gravy perfect for serving over warm biscuits.
Ingredients:
1 lb breakfast sausage (mild or spicy)
2 tbsp butter
1/4 cup all-purpose flour
2 ½ cups whole milk (or more as needed)
1 tsp salt (adjust to taste)
1/2 tsp black pepper (or to taste)
1 tsp garlic powder (optional for extra flavor)
1/2 tsp crushed red pepper flakes (optional for a spicy kick)
Instructions:
In a large skillet over medium heat, cook the sausage, breaking it up into crumbles with a spoon, until browned and fully cooked.
Do not drain the grease unless there’s an excessive amount (a little fat helps with flavor).
Add the butter and sprinkle flour over the cooked sausage and stir well to coat the meat.
Cook for 1-2 minutes, stirring constantly, to remove the raw flour taste.
Slowly pour in milk, stirring constantly to avoid lumps. Continue stirring while the gravy thickens, about 5-7 minutes. Stir in salt, pepper, garlic powder, and red pepper flakes (if using). If the gravy becomes too thick, add a splash of milk to reach your desired consistency. Pour over warm biscuits and serve immediately!
Best Homemade Fluffy Biscuits
Ingredients (Makes about 8 biscuits):
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tbsp sugar (optional, enhances browning & flavor)
1/2 cup (1 stick) cold unsalted butter, cubed
3/4 cup cold buttermilk (plus more for brushing)
Instructions:
Preheat Oven:
Preheat to 425°F (220°C). Line a baking sheet with parchment paper.
Mix Dry Ingredients:
In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
Cut in the Butter:
Add cold butter cubes and cut into flour using a pastry cutter or fork until it looks like coarse crumbs (small pea-sized bits of butter).
Add Buttermilk:
Pour in cold buttermilk and gently stir until dough just comes together (don’t overmix).
Fold for Fluffiness:
Turn dough onto a floured surface. Pat into a rectangle (~1/2 inch thick), then fold it like a letter. Turn, flatten, and repeat 2 more times — this creates layers. Finally, pat dough to about 3/4-inch thickness.
Cut Biscuits:
Use a round cutter (don’t twist) to cut out biscuits. Gently press scraps together to cut more.
Bake:
Place biscuits close together on baking sheet (helps them rise tall). Brush tops with buttermilk. Bake 12–15 minutes, until golden brown.
