Red Velvet Cheesecake Sushi Rolls

Ingredients

For the Red Velvet Cake:

  • 1 cup all-purpose flour

  • 1 tbsp cocoa powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup sugar

  • 1/2 cup vegetable oil

  • 1 large egg

  • 1/2 cup buttermilk

  • 1 tsp vanilla extract

  • 1 tsp white vinegar

  • Red food coloring (as needed)

For the Cheesecake Filling:

  • 8 oz cream cheese, softened

  • 1/4 cup powdered sugar

  • 1/2 tsp vanilla extract

  • 1/2 cup heavy whipping cream (whipped to stiff peaks)

Optional for Garnish:

  • Melted white chocolate

  • Crushed Oreos

  • Chocolate drizzle

  • Whipped cream

Instructions

1. Make the Red Velvet Cake:

  1. Preheat oven to 350°F (175°C). Line a large sheet pan (like a jelly roll pan) with parchment paper and lightly grease it.

  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.

  3. In another bowl, mix sugar and oil until combined. Add egg, buttermilk, vanilla, vinegar, and red food coloring. Mix well.

  4. Gradually add dry ingredients to wet ingredients and stir until smooth.

  5. Pour the batter into the prepared pan and spread evenly. Bake for 10–12 minutes or until the cake springs back when touched.

  6. Let the cake cool slightly. Place another piece of parchment on top and roll the cake gently into a log (with parchment inside). Cool completely.

2. Make the Cheesecake Filling:

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.

  2. Fold in the whipped cream until fluffy and smooth.

3. Assemble the Sushi Roll:

  1. Unroll the cooled cake and remove parchment.

  2. Spread cheesecake filling evenly over the cake.

  3. Carefully roll the cake back up tightly without the parchment.

  4. Chill the roll for at least 1 hour to set.

4. Slice & Decorate:

  1. Slice the roll into 1-inch thick “sushi” pieces.

  2. Drizzle with melted white chocolate, chocolate sauce, or sprinkle with crushed Oreos for garnish.

Tips:

  • Use dental floss or a sharp knife for clean slices.

  • You can pipe the filling in swirls for an extra sushi-like appearance.

  • Serve chilled for best texture.
