Chicken Taco Casserole
Ingredients:
1. 2 cans (10.5 ounces each) cream of chicken soup
2. 1 cup chunky-style salsa (such as PACE Mild brand)
3. 1 can (4 ounces) diced green chiles
4. ½ cup sour cream
5. 1 packet (0.85 ounces) chicken taco seasoning mix (such as Old El Paso brand)
6. 3 cups shredded white meat chicken
7. 1 can (15 ounces) seasoned black beans, drained (such as Bush’s brand)
8. 3 cups crushed tortilla chips
9. 2 ½ cups shredded Colby Jack cheese
10. 1 cup shredded Monterey Jack cheese
11. Chopped fresh cilantro, optional garnish
Directions:
1. Preheat Oven:
1.1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Prepare the Casserole:
2.1. In a large bowl, mix together the cream of chicken soup, salsa, diced green chiles, sour cream, and chicken taco seasoning mix.
2.2. Stir in the shredded chicken and black beans until well combined.
Layer the Casserole:
3.1. Spread half of the crushed tortilla chips in an even layer at the bottom of the prepared baking dish.
3.2. Top with half of the chicken mixture, spreading it out evenly.
3.3. Sprinkle half of the Colby Jack and Monterey Jack cheeses over the chicken mixture.
3.4. Repeat the layers with the remaining tortilla chips, chicken mixture, and cheeses.
Bake the Casserole:
4.1. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
4.2. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serve:
5.1. Garnish with chopped fresh cilantro, if desired, before serving.
