Homemade Peppermint Patties

Ingredients:

• 2 1/2 cups powdered sugar

• 1 1/2 cups sweetened condensed milk

• 2 tsp peppermint extract (or more to taste)

• 1/4 tsp salt

• 2 cups semisweet chocolate chips

• 2 tbsp coconut oil or vegetable shortening (for smooth chocolate coating)

Instructions:

1. Make the Peppermint Filling:

• In a large mixing bowl, combine powdered sugar, sweetened condensed milk, peppermint extract, and salt.

• Mix until the mixture is smooth and thick. If the mixture is too sticky, you can add a little more powdered sugar to help it come together.

• Once combined, knead the mixture into a dough-like consistency.

2. Shape the Patties:

• Roll the dough into small balls, about 1-inch in diameter, and then flatten them into patties using your hands or a spoon.

• Place the patties on a parchment-lined baking sheet, leaving space between each one.

3. Freeze the Patties:

• Place the baking sheet in the freezer and let the patties freeze for at least 30 minutes to firm up.

4. Prepare the Chocolate Coating:

• While the patties are freezing, melt the chocolate chips with coconut oil or vegetable shortening in a heatproof bowl over a double boiler or in the microwave in 30-second intervals, stirring after each, until completely melted.

5. Coat the Patties:

• Once the patties are frozen, dip each one into the melted chocolate, making sure they are fully coated.

• Use a fork to lift the patties out of the chocolate and let any excess chocolate drip off before placing them back on the parchment paper.

6. Chill and Serve:

• After all patties are coated, place them back in the freezer for 20-30 minutes to allow the chocolate to harden.

• Once set, they are ready to serve! Store them in an airtight container in the fridge to keep them fresh.
