Ingredients:
• 6 large eggs
• 1 cup cottage cheese
• ½ cup shredded cheese (cheddar, mozzarella, or your favorite)
• ½ cup diced veggies (spinach, bell peppers, mushrooms, etc.)
• Salt and pepper to taste
• 1 tablespoon olive oil (for greasing)
Instructions:
1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with olive oil or line it with silicone muffin cups for easy removal.
2. Prepare the Ingredients: In a bowl, whisk together the eggs, cottage cheese, and shredded cheese until well combined. Season with salt and pepper.
3. Add Veggies: Stir in the diced veggies of your choice. You can use spinach, bell peppers, mushrooms, or any other veggies you prefer. If using spinach, it’s a good idea to lightly sauté it beforehand to reduce moisture.
4. Fill the Muffin Tin: Pour the egg mixture evenly into the muffin cups, filling each about 3/4 full.
5. Bake: Bake for 18-22 minutes, or until the egg bites are set and slightly golden on top. You can insert a toothpick into the center to check for doneness – it should come out clean.
6. Serve: Allow the egg bites to cool for a few minutes before serving. They can be enjoyed warm, or you can store them in the fridge for a quick breakfast or snack later.
