Soft, buttery loaf with a creamy cheesecake swirl and fresh strawberries—ideal for breakfast or dessert!
Ingredients
For the Loaf:
- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (113g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120ml) sour cream or Greek yogurt
- 1 cup (150g) diced fresh strawberries
For the Cream Cheese Swirl:
- 4 oz (113g) cream cheese, softened
- ¼ cup (50g) granulated sugar
- 1 egg yolk
- ½ tsp vanilla extract

Preheat Oven & Prepare Pan:
Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper. -
Make the Loaf Batter:
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla and sour cream.
- Gradually mix in the dry ingredients until just combined. Fold in the diced strawberries.

Make the Cream Cheese Mixture:
In a small bowl, beat the cream cheese, sugar, egg yolk, and vanilla until smooth. -
Assemble the Loaf:
- Pour half of the batter into the loaf pan.
- Spread the cream cheese mixture over the batter.
- Spoon the remaining batter on top and gently swirl with a knife for a marbled effect.

Bake & Cool:
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
