Strawberry Cream Cheese Loaf

Soft, buttery loaf with a creamy cheesecake swirl and fresh strawberries—ideal for breakfast or dessert!

Ingredients

For the Loaf:
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) sour cream or Greek yogurt
  • 1 cup (150g) diced fresh strawberries
For the Cream Cheese Swirl:
  • 4 oz (113g) cream cheese, softened
  • ¼ cup (50g) granulated sugar
  • 1 egg yolk
  • ½ tsp vanilla extract

Instructions

  1. Preheat Oven & Prepare Pan:
    Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

  2. Make the Loaf Batter:

    • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a separate large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla and sour cream.
    • Gradually mix in the dry ingredients until just combined. Fold in the diced strawberries.
  3. Make the Cream Cheese Mixture:
    In a small bowl, beat the cream cheese, sugar, egg yolk, and vanilla until smooth.

  4. Assemble the Loaf:

    • Pour half of the batter into the loaf pan.
    • Spread the cream cheese mixture over the batter.
    • Spoon the remaining batter on top and gently swirl with a knife for a marbled effect.
  5. Bake & Cool:

    • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
    • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. Serve & Enjoy:
    Slice and enjoy on its own or with a dusting of powdered sugar!
