Baked Broccoli Cheese Balls

Ingredients:

2 cups broccoli florets, finely chopped 🥦
1 cup shredded cheddar cheese 🧀
1/2 cup grated Parmesan cheese 🧀
1/2 cup breadcrumbs (panko or regular) 🍞
2 large eggs, beaten 🥚
2 cloves garlic, minced 🧄
1/2 tsp onion powder 🧅
1/2 tsp black pepper
1/2 tsp salt 🧂
1/4 tsp red pepper flakes (optional)

Instructions:

1️⃣ Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it. 🔥

2️⃣ Blanch the broccoli – Bring a pot of water to a boil, add the chopped broccoli, and cook for 2 minutes. Drain and pat dry with a paper towel. 🥦💦

3️⃣ Mix the ingredients – In a large bowl, combine broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, garlic, onion powder, salt, black pepper, and red pepper flakes (if using). Mix well until a sticky mixture forms. 🥣

4️⃣ Form the balls – Scoop out about 1 tablespoon of the mixture and roll into small balls. Place them on the prepared baking sheet. 🍘

5️⃣ Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy. 🔥
