Carrot Cake Bars

Ingredients:

For the Bars:

1 cup all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon salt
½ cup granulated sugar
½ cup brown sugar
2 large eggs
⅓ cup vegetable oil
1 cup finely grated carrots

For the Frosting:

4 oz cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract

Instructions:

Preheat Oven: Preheat to 350°F (175°C). Grease an 8×8-inch pan or line with parchment paper.
Make the Batter: Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. In another bowl, beat sugars, eggs, and oil. Stir in grated carrots, then fold in dry ingredients.
Bake: Pour batter into the pan and bake for 25–30 minutes. Cool completely.
Prepare Frosting: Beat cream cheese, powdered sugar, and vanilla until smooth. Spread over cooled bars before serving.
