Fried Pork Chops with Bacon Gravy

 Ingredients:

For the Pork Chops:

– 4 bone-in pork chops (1/2 inch thick)

– 1 cup all-purpose flour

– 1 tsp paprika

– 1 tsp garlic powder

– 1 tsp onion powder

– 1/2 tsp salt

– 1/2 tsp black pepper

– 2 large eggs

– 1/4 cup milk

– Vegetable oil (for frying)

For the Bacon Gravy:

– 4 slices bacon (chopped)

– 3 tbsp bacon grease (from cooked bacon)

– 3 tbsp all-purpose flour

– 2 cups whole milk

– Salt and pepper to taste

 Directions:

1. Prepare the Pork Chops:

– Combine flour, paprika, garlic powder, onion powder, salt, and pepper in a shallow bowl.

– In another bowl, whisk eggs and milk.

– Dredge each pork chop in the flour mixture, dip in the egg mixture, then dredge again in the flour.

2. Fry the Pork Chops:

– Heat vegetable oil in a skillet over medium-high heat (about 1/4 inch deep).

– Fry pork chops for 3-4 minutes per side until golden brown and cooked through (145°F internal temperature).

– Set on paper towels to drain.

3. Make the Bacon Gravy:

– In the same skillet, cook chopped bacon until crispy, remove bacon, and set aside.

– Reserve 3 tbsp of bacon grease.

– Stir in the flour to make a roux, cooking for 1-2 minutes.

– Gradually whisk in milk, stirring constantly to avoid lumps. Simmer for 3-4 minutes until thickened.

– Season with salt and pepper, then stir in the crispy bacon.

4. Serve:

– Pour bacon gravy over the fried pork chops. Serve with mashed potatoes or your choice of side.
